The Workweek Lunch I Eat Every Day

I’m doing a little detoxing after spending a long weekend in New Orleans for a bachelorette party, so it seemed like a good week to share the healthy lunch I’ve been taking to work religiously for the last six months or so! I bring my lunch to work most days because it’s an easy way to save money and ensure I’m eating a little healthier than if I were to be tempted by hot, melty sandwiches and enormous buffalo chicken wraps at nearby restaurants. I had never really found a lunch routine I loved until discovering these Dole chopped kits earlier this year—and now I’m OBSESSED. I think the chopped part is key—I love the smaller-sized lettuce in these kits—it’s what makes restaurant salads (looking at you, Tucci Bennuch) so much better than most make-at-home ones. Plus, these kits come with dressings and toppings like fried onions and crispy wontons, so you’re getting more than just a basic bag of lettuce. I portion out half of the bag for lunch (and eat the other half the next day), then add a Tyson chicken patty (just heat up for a minute in the microwave) and an avocado to make a pretty legit salad that I always look forward to and keeps me full through my 5:30 PM workout. The BBQ Ranch and Sesame Asian kits are my fave, but they make a ton of different kinds, like Bacon & Bleu and Sunflower Crunch. I buy the Caesar a lot for dinner at home, too—it makes an easy side salad with steak or pizza. GENIUS.

Just a little hot tip this week that you might want to try if you’re tired of the old PB&J! So many people at work have asked about/ogled my salad while I’m making it in the kitchen, and I’ve kind of become known for these tasty little kits! 😂 Definitely beats spending $18 per day at Crisp & Green!

Anyway, New Orleans was so much fun—truly a great group—but being away always makes me appreciate Minneapolis more. No offense to Nola, but Minneapolis was just so green and lush and pretty to come home to! Looking forward to a family picnic up north this Saturday followed by some work in the yard—racing against time to get as much done as we can before winter! 💓
